After a long morning of wandering around the streets of historic downtown Charleston in the humidity and sun, there is nothing better than escaping to a cool brick building off of Meeting Street for our last seafood meal of the trip.

Charleston is home to so many great places to eat. Having a delay of trip meant we were able to visit a recommended restaurant we would have otherwise missed. If you're lucky you can try out some hush puppies that the servers give out on the nearby corner, handing you a coupon for a free appetizer. When you enter the building, there are little plaques at every table that tell which celebrities have eaten at that spot. From Raven Symone, Lance Armstrong, The Beach Boys, Sandra Bullock, and so many more. 

For our free appetizer, we ordered their specialty, Carolina Delight. This was my second time eating grits, and they were so yummy! The Carolina Delight is a lightly fried grit cake topped with your choice of seafood (we got shrimp).

The menu has a wide range of fresh seafood, and traditional foods from the south! 
My step-dad got the buffalo and regular shrimp with mac and cheese and hush-puppies!

 Not wanting to stuff ourselves, and knowing the dishes were large, my mom and I decided to split shrimp and grits (with cheese). Our sides were fries, okra and bread. Definitely a good dish to split, and I was so glad we did!

We had a great time eating at Hyman's, our table was the only one filled in our little section so we had the room to ourselves. They also encourage you to visit their giftshop after you eat, where we bought some really yummy smelling scrubs before going back out into the heat. Later on, I opted for some Lemon Ice from one of the carts off the road while wandering around in the heat!

Charleston was recently just ranked the #1 city in the world by travel and leisure, and Hyman's was definitely in my top 3 best places to eat while I was there! I hope you enjoyed this post, what is your favorite seafood dish?

Jestine's: Charleston

5 years ago, in the month of June, my family and I did a different road trip where we spent the last few days in Charleston and then Nashville. When we had the opportunity to spend (what we thought) would be just one night back in Charleston, we wanted to eat at a local favorite.

Our shuttle driver, JP, suggested Jestine's, which is near the historic district and as we drove past the restaurant, four out of five of us immediately recognized the place. Jestine's was our favorite spot to eat when we were there five years ago and we were eating there again.

Walking into Jestine's I immediately knew where we had sat 5 years ago, which means not much as changed. Which is really great. There weren't any lines and we got in right away. At a popular place like Jestine's lines are pretty common and last time we had to wait about an hour before getting a table for four. This time we had my step sister along, and our party of five was seated right away. 

The four of us that had been there before, reminisced about the cornbread and fried chicken (their specialty). We ordered cornbread for an appetizer, and put in our orders of food.

Jestine's had cute little photos up, as well as magazine clippings that told about Jestine's life, a feature in Oprah's magazine and a ton of other bits. The staff were super kind too. 
Our entire table ordered something different, I did just a plate of shrimp with okra (I have never eaten so much okra in my life!).

Honestly, Jestine's is definitely one of my top 3 places I ate on this trip! They have a wide variety of food that locals love, a great atmosphere and I loved it. 
I still can't get over the fact that we couldn't remember the name of the place we had been to five years ago that we loved so much, and wound up back at it again!

It's been a crazy spring. Honestly, it has been a crazy semester in general, and not wanting to leave this space without any new content for too long, I thought I would just pop in and put some of the photos I've been taking on here! The weather has been so iffy lately and the colors haven't quite popped yet, but I cannot wait until they do!

One day, before Spring break, the weather was incredibly nice! 70 degrees Fahrenheit (21.1*C). There weren't very many colors but it felt nice to finally get rid of the dull gray sky and feel the warmth of the sun. It had been way too long! Sadly, the warmth was cut short by Old Man Winter and there were a few inches of snow yet to be dropped.  After a few busy and hectic weeks of projects and deadlines, it was finally spring break/Easter holiday. I spent a lot of time walking up the nearby mountain. I spent my week relaxing and enjoying my time off.

 In preparation for the Easter holiday, family dinner, we stopped at the cheese factory that isn't too far away from my home. (Luckily this was before my challenge and I could sneak a few bites in!)

 Easter morning we woke up and had a delicious brunch and sought out our Easter baskets before heading off to church. If your parents don't hide your baskets, I'm so sorry. I honestly look forward to this every Easter and I'm so glad my mom still hides them!

  Like every holiday, there was a lot of food! My favorite dish is probably the sweet potatoes, so delicious! Sorry I didn't take more photos of the food, I was a bit busy and totally distracted by this cute pup!

Being back at University keeps me busy, and makes me anxious to have warmer weather so I can go out and take millions of photos! I plan on exploring a bit more once the weather warms up. It's been a day consisting of 3/4 of the seasons. This morning it was sunny and blue skies, this afternoon it was snowing, and I just walked in from class in the rain/hail.

Cashew Chicken Zoodles

I love Chinese food. There's just something about it that is so good tasting to me. When I saw this recipe from my favorite food blogger, I knew I had to give it a try and put my own twist on it. If you love Chinese food like I do, but want a healthier take on it. You have got to try this recipe out right now.

It's not too spicy and not too hot, and perfectly real food.

Here's What You'll Need:
2 skillets
Spiralizer
2 Tablespoons seasame oil
2 teaspoons minced garlic
1 cup shredded carrots
1 cup sliced cabbage
1 large bell pepper
1/2 chopped green onion
2 medium zucchini (spiralized) 
3 chicken breasts cooked and shredded
3 ounces cashews

Sauce:
1/2 cup creamy peanut butter
1/3 cup honey
1/3 cup low sodium soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 teaspoon ground ginger
1-2 teaspoons Sriacha (or other hot sauce)

Here's what you do:
  1.  Cook Chicken and shred, set aside and cut up veggies
  2. Heat 2 tablespoons sesame oil and garlic over medium. Add carrots, cabbage and pepper. Cook about 5 minutes until tender. 
  3. Add zucchini noodles and shredded chicken along with onions and cashews. Cook and stir for about 3-5 minutes Turn to low heat
  4. Combine Sauce ingredients in small saucepan over low heat. Whisk until peanut butter has melted and everything is combined. (About 5 minutes)
  5. Add sauce to chicken and veggies, toss together and combine. (about 2 minutes)
  6. Enjoy!

This was our favorite recipe so far, and I hope you give it a try! I love spiralizing and creating new recipes and now that I'm on a 10 day break from school, I'm excited to try even more and share them with you all!

Crave Dinner

It's not often that I get treated to nice dinners out. While my family and myself were enjoying our time visiting our relatives over in Minnesota, we had made reservations to Crave which sat in the Galleria in nearby Edina.

We hurried in from the cold and into the welcoming atmosphere at the restaurant. When customers first walk in the very first thing that catches their eye is the sushi cooks, preparing the sushi and placing it on top of the counter for the waiters and waitresses to take away to hungry guests. We had arrived for our 7pm dinner reservations with hungry stomachs and seeing the sushi and various desserts on that counter made me really hungry. I thought about grabbing a plate. I didn't. Don't worry. 
With our party of six, we were sat at a large booth near the back of the place, the lighting was very calm and didn't pan out all too great for my grown up camera, but my iPhone managed to take some not-orange ones.  Above our table was a really cool chandelier, which was either made from blown glass (my opinion) or plastic which made for a ten minute conversation piece. Whether it was glass or plastic, it was very cool looking.

We took some time to mull over the menu, which was fixed for New Years, and decided that the sushi we saw walking into Crave looked too good not to pass up and ordered some for an appetizer to start off. I usually stick to the California Roll for sushi and while my uncle had ordered that, I tried out my parents' choice of Bamboo Bite Sushi which has tempura shrimp, cream cheese, avocado and
jalapeno.

As we waited for our main courses, we sipped on our drinks. Wine for my mom, beer for my step-father, strawberry lemonade for my uncle and I. Our main dishes finally arrived, and as I glanced around the table, they all looked delicious. I had settled on the Pesto Chicken.

The Crave's pesto chicken is decorated with greek yogurt pesto sauce, melted fresh mozerella, roasted new potatoes and rainbow cauliflower. I don't know if it was because I was so hungry or the fact that all of the flavors worked together really well, I thought this was delicious. Amazing. I would definitely go back and order this again, I wasn't even able to finish off the plate. I'm really glad I had chosen this as my last great meal of 2015. 
After filling our stomachs, not saving enough room for dessert, we trudged off to the car to surprise some family friends who were having their own New Years Eve party. 
If you're ever in Edina, or near Minneapolis or even a Crave restaurant in general, I would suggest going! They have a wide variety of foods and flavors for anyone. You can check out the menu right here.
