I love nuts. But seriously, I've been making homemade nut butters for awhile now and there is nothing I love more. One thing about store-bought peanut butters is that there are way too many ingredients. Unless you're willing to pay a bit more, making it at home could save you a few bucks too! If you accidentally run low on peanut butter, almond butter or cashew butter this is also an easy fix! No need to run off to the shop in your slippers!
Currently, my favorite nut butter is cashew butter. I've gone through Almond butter and natural peanut butter and both are great but cashews have a sweeter taste. I tried making this in our mini food pulser/processor and it just didn't turn out as well as when I used the big blender.
The freshman fifteen. Yea that's a thing. Eating healthy when you're away from home when you have no one to tell you that "maybe that giant monster cookie isn't such a good idea for lunch or dinner." can be really difficult. I really love eating healthy, I have for a really long time. I thought I would share some tips!
Tips:
1. If your school has a salad bar, use it. I get 99% of my food from my schools salad bar. Occasionally I'll have a soup, but only if there are no animal products. My school has a wide variety of toppings, and greens to choose from that make switching up salads fun and exciting.
2. Eat breakfast in your room. This is easy. Taking time to make breakfast in your room is consistently stated on so many sites as a healthier way to start the day. Oatmeal is my favorite!
3. Read the labels! This is for anyone, even if you're not in school. If a product has ingredients that you can't pronounce, you probably shouldn't put that into your body. Standing in the aisle for 2 minutes extra to look before throwing it into your shopping cart might save you.
4. Pre-pack meals. This might be hard if you're like me and live in the dorms. While I'm running around on lower campus, I like to have a pre-packed snack in my bag to take out anytime I get hungry. I snack a lot.

5. Look up some good YouTube workout videos! My favorite channels are Shayloss and Train with Monica. Since I did something funky to my knee I can't do legs as often, so my abs are going to look great. Probably.
*Bonus Tip: Even though Organic food might be more expensive, you can always buy in bulk and freeze stuff. My mom freezes a lot of food and it's completely fine when we take it out later on. Also, coupons=best friends.
I will be the first to admit, finding foods to enjoy without any added sugars is really hard and sometimes I give in. Scrolling through my instagram feed, I kept seeing users post colorful photos of nicecream. Nicecream? My first thought was something like "it's run by someone who lives a vegan lifestyle so it must just mean it's dairy-free." I actually wanted some so bad. It looked so good! And who wouldn't want an ice-cream inspired dish for breakfast?
I thought I would never be able to have it because added sugars. That is, until I found out that nicecream just simply meant, frozen bananas blended up in a blender with soy or nut-based milk. SUPER easy. SUPER...nice.
Here are some of my favorite flavors that I've made with my mini blender (my $15 purchase is definitely getting great use.)
1. Peanut-Butter Banana
-2 medium bananas, sliced and frozen
-1 spoonful of peanut powder
-soymilk
-cinnamon

2. Simple Berry Pick me up
-2 medium bananas, sliced and frozen
-berries of your choice (I used raspberries and blueberries)
-soy/whatever nut milk you prefer

3. Just Bananas
-2 medium bananas, sliced and frozen
-nut milk
4. Banana Bread Nicecream
-2 medium bananas, sliced and frozen
-cinnamon
-nutmeg
-walnuts to top
-choice of milks
5. Blueberry Banana
-2 medium bananas, sliced and frozen
-handful of blueberries frozen, or thawed
-nutmilk
-some cacao
I like to add chia seeds sometimes to these if I think I want some more fiber. I love these so far and I can't wait to try some more! Honestly these are so simple, and so much more healthier for you than what's sold at the store, though you can still go out and get them. I like to freeze the bananas for about a day before making them, if I wait too long they'll go brown when I take them out of the freezer pretty quick. Because I live in a dorm, I like to be the courteous neighbor and make my breakfast nicecream the night before so that I'm not waking up anyone super early!

I was just home last weekend for a three day weekend and after falling off the clean eating train (and rolling down the hill away from the tracks), I was really looking forward to getting back and being refreshed. Recently, my mom bought a spiralizer to make healthy noodles from and I was really excited to try it out!

When you think of clean eating, or whatever diet resolution you have made this year, you may have thought, "Shoot I have to give up my favorite foods." While many of your favorite foods might have to be cut back, there are still some simple ways to keep enjoying them. Today it's all about the good things in life. Like pizza and quesadillas.
I put this Spinach filled dish as one of the first in this new lifestyle, and it was quick, easy, and delicious!
(This is also my 100th blog post! Can you believe it?! I can't! )
2.5 cups Whole Wheat Flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup honey
1/2 cup brown sugar
1 cup mashed banana (this took me two bananas)
1/4 cup vanilla yogurt
1/4 cup vegetable oil
3/4 cup milk (you can also use almond milk, soy milk, etc)
1 & 1/4 cup blueberries
2 large bowls, or one large, one medium
Here's how to make them:
*Preheat oven to 350 degrees Fahrenheit (176 degrees Celsius)
*Set aside muffin tins, I used one small sized and one for larger muffins, you can either spray these with a non-stick spray or line them with baking cups (which is what I did).
*In one of the bowls, toss the flour, baking soda, salt and cinnamon together until combined and set aside
*In the other bowl, mix the honey and brown sugar together; use a fork to break up the clumps
*Add the banana, yogurt and vegetable oil; add the wet ingredients to the dry, not the milk yet!
*Gently fold together, and then add milk, mix for a bit and then add in blueberries. Careful not to over mix the batter.
*Spoon out the batter into the muffin tins. Fill to the top of each slot.
*Bake for 17-18 minutes, to make sure they're well baked check with a toothpick. If the toothpick comes out with a little muffin bit clingy to it, it still needs a bit more time. About 2 minutes, and then check again.
