Let's be honest here. I was one of those people who was not at all ready for it to be fall. The colorful leaves on the trees, yes maybe. But the colder weather, and not being able to lay out on the deck and the fact that classes are in full swing. No. Thanks. But now that October has rolled around, I've finally come to terms with it and have fallen in love with the season again. While scrolling through some photos, and being poorly (I can't breathe out of one nostril it's really great), I thought I would pop a few in a blog post for you all to enjoy. 



Most of these, if not all of them, are from a trip I took to the market in Minneapolis and it was packed with people and colorful looking veggies!

Chickpeas

Savory and Spicy Chickpeas

It's finally summer. Which means I'm home from University and creating new dishes and enjoying loads of time outside! Eating salads is one of my favorite things, but having salad two meals in a row just isn't my style, and thus I came up with this dish! 


A vegan chickpea dish with spices and veggies that's easy to make and doesn't take much time at all! If you're looking for a healthy, easy and quick dish to make for yourself (or one other person) this is the meal for you! 
What You'll Need:
1 can drained garbanzo/chickpeas
1 cup chopped peppers
1/4 cup mushrooms
1 cup chopped white onion
2 tablespoons Garlic Powder
1 tablespoon Onion powder
1-2 tablespoons Paprika
1 teaspoon oregano
1/2 teaspoon red pepper flakes

You can 100% play around with the flavors, personally, I really have been loving garlic powder so you can take it down or turn it up with any of these ingredients!

What You'll need to Do:
Drain the chickpeas
Heat 1 tablespoon Olive Oil in pan over medium heat
Add onions, peppers, mushrooms to pan and cook about 4 minutes
Add all the spices and stir
Add chickpeas and add more spices if you wish! 
Stir continuously and cook for about 5 more minutes


I found that I split up the spices and added more after the chickpeas were added and you might want to do that as well! I hope you all love this recipe as much as I did! I really love chickpeas and want to see what other dishes will come up next!

Target Food Haul

I love food. And I love food shopping. While so many people can spend hours wandering around a Forever 21 or H&M, I really enjoy going up and down the grocery aisles just checking out what's new and seeing different things. When I go shopping for food, which at my University isn't very often since I don't have a very large fridge or shelf space. 
Recently, if you read my post about going plant-based, I've been trying to find good vegan food. While my campus has a wide variety for a salad bar and some vegan snacks, I still was looking for something warm. Something I could just steam in the microwave or heat up. 
Taking advantage of the weather, I hopped over to Target.

I had eaten lunch already at that point, therefore my shopping cart wasn't full with things I didn't need to buy! (plus I was on a $20 budget). Trying to find things that are vegan isn't very difficult, especially when you only buy what you need. I found so many vegan options:

I'm not a big fan of cheese by itself in the first place, so I didn't pick up any Daiya, but knowing that they have it makes me very excited and I do want to try it eventually! Aside from the already vegan products (veggies and fruits and course nut butters(my favorite) and I picked up a few mini packets. Though I already regret not taking a big container anyway. They also had a meat alternatives section and was pleased by the selection! Also I had to get the bread, it practically had my name on it! 

 I picked up their last pack of sweet potatoes and left the store incredibly excited to make dinner!

Maybe it doesn't look immediately pleasing but let me tell you. It tasted amazing and I am definitely going to buy Quinoa burgers (or make my own??) when I get home again!

Consensus?
The Quinoa burgers: ARE AMAZING honestly I may never look back after eating these
Tuscan Kale Blend: Delish! Not sure how I like warm Kale though, but still nice. 
Sweet Potatoes: Were probably on sale because it's nearly the end of their season. 
Almond Butter: Delish and I love the little packet
Hazelnut Butter: Basically healthy Nutella. It's delish! 
Peanut Butter: It's PeanutButter. Of course it's delicious.
